Prepare morels by removing the end of the stem with dirt on it. Then cut morels in half lengthwise. Soak them for 8 hours or longer in a bowl of cool, salted water. Take note that morels must be eaten within 24 hours of picking.
After soaking, remove morels from water and dry them with towels. Morels are delicious sautéed in a bit of olive oil. They can be eaten by themselves or added to other foods, like omelets, spaghetti sauce, or stir-fry.
Another
way to cook morels is to stir an egg or two with a little water.
Then crush a couple dozen saltine crackers with a rolling pin. Dip
the morels in the egg, then roll them in saltine crumbs. When the
morels are all breaded, sauté them in butter until the breading
turns golden brown. This is the way my mom fixes morels. There are
never leftovers.
